Zivaniya is a unique and traditional drink of Cyprus and is produced during the processing and distillation of grapes. This process takes place by crushing the whole grape – including the stems and seeds – and distilling the residue (or pomace) of this crushed grape. This distillation process is mostly carried out in a copper cauldron, at a high temperature. The resulting mixture is then distilled once more, and as a result of this process Zivaniya is produced.
This is a drink similar to raki or moonshine, colorless and quite strong alcoholic. The taste profile of the drink is characterized by a light but distinct aroma of dried grapes. It is generally recommended to be served cold and drunk slowly, sip by sip. In this way, all the flavors and aromas of the drink are best experienced.
